Dubbed as a “legendary experimentalist” by the New York Times, Toronto BarChef owner Frankie Solarik is bringing one of the world’s most progressive cocktail bars to New York City in spring 2025.Â
Solarik, a pioneer of the contemporary, modernist cocktail, and featured judge on Netflix’s ‘Drink Masters’, first opened BarChef in 2008 with the idea of becoming one of the world’s most recognized and progressive cocktail programs. Now, under the bright lights, the Big Apple is set to become it’s newest home.Â

Cocktail program
BarChef’s “Overture” and “Parfumerie” program cocktails are prepared by a team of mixologists, creating cocktails with “unparalleled amounts of complexity with attention to detail placed, not only on the flavour and aroma of the cocktails, but also mouthfeel, texture and viscosity”, according to the official website. This is achieved with complex in-house produced syrups, infused accent liqueurs, and bitters.Â
It’s ‘Modernist’ program cocktails are in the hands of BarChef’s team of chefs in the kitchen, who utilize a “multi-sensorial approach to composition.” This has led to the renowned cocktail bar being recognized on the Gold List in 2018 and 2020 by Conde Nast Traveller Magazine as one of the top cocktail bars in the world.Â
Fresh greens, florals, dried grains, soils, fresh ferns, and more are used to “accentuate elements of flavour and aroma,” creating an immersive and visceral experience.Â

The menu
The BarChef Classics menu features seven iconic classics to try from that have defined the cocktail bar’s approach over the years, included a Toasted Old Fashioned, Strawberries and Lavendar, and an Apricot Sazerac.Â
Making your way through the extensive, eclectic bar menu, an ‘Overture Series’ that incorporates fresh herbs, bitters and syrups includes a King of Kensington, and Italian Breeze, and an Ocho Rios, giving you a sip from different regions of the globe.Â
BarChef’s ‘Modernist Series’, ‘Parfumerie Series’, and Absinthe and spirits selection round out the elevated bar experience.Â

A series of small plates that can be paired with your cocktails can be found on BarChef’s menu, including beef bolognese croquettes, a truffle lobster roll, and fish pakoras, among others.Â
New York City location
The new location, set to open this spring, will be located on the fourth floor of 21 West 35th Street in the heart of Manhattan.Â
An official opening date has yet to be announced, so stay tuned for further announcements.Â
