There’s nothing quite like the slow process of soup making to decompress after a hectic and fun holiday gathering.
While Thanksgiving dinner is one of my favourite holiday meals of the year, it’s the wonderfully aromatic, rich soup that comes after the main event that holds a special place in my heart.
Turkey soup

Save your turkey bones and boil with onions, carrots, garlic, celery, parsley, salt and pepper, and any other aromatics you like. Start early in the morning - boiling about 10 hours - remove from the heat and strain your veggies and bones from the pot. Place broth back on the stove and place sliced celery and carrots.
Bring to a boil and then simmer until they get tender enough to bite through. Add egg noodles until al dente. Add additional parsley to taste.
